Diwali is approaching along with other Indian festivities and so I'd like to introduce you to one of the most popular Indian desserts I grew up with - peda. As a kid with a massive sweet tooth, access to both Indian and western desserts on all festivals (and birthdays) meant consuming double portions of dessert. The only way to celebrate. Peda are traditionally made from milk powder, butter and sugar, with Indian spices such as cardamom and saffron. Today, I only use 2 ingredients and 2 spices. Quick and simple! A 5 minute treat!

INGREDIENTS

      METHOD

      • Melt the coconut butter and whisk in the powdered sugar or agave syrup, followed by the saffron and cardamom
      • Once cooled, scoop 1 tsp of dough and roll into a ball using your palms
      • Repeat until the dough is finished, and use a stencil (or fork) to gently press down a beautiful pattern on the peda until they are halved in height
