CINNAMON POP SQUARE PEANUT BUTTER CHEESECAKES

Smooth creamy oatmeal, topped with lots of peanut Butter, Pri's Puddings Peanut butter pie, shredded coconut and freeze dried raspberries🍓🍇. I make oatmeal using oat flour for a much smoother dessert-like texture.

INGREDIENTS

BASE (makes 2)

  • 3 packs of @prispuddings cinnamon Pop squares (1 for the topping) ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
    PEANUT BUTTER TOPPING
  • 2 tbsp peanut butter
  • 1/2 tbsp coconut oil
  • 1 tbsp agave syrup
    ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

    CREAM CHEESE LAYER
  • 60g cashew butter (or cashews soaked in hot water)
  • 65g coconut milk (canned, thick white part)
  • 2 tbsp coconut oil
  • 2 tbsp agave syrup
  • 1 tbsp lemon juice

    METHOD

    • Crumble 2 packs of Pop Squares in a bowl and fill the two jars with a base
    • Blend all the cheesecake filling ingredients in a high speed blender
    • Fill the jars just below the top
    • Mix the peanut butter topping ingredients in a bowl, and fill each jar with 1 tbsp on top of the cream layer
    • Top with 1 extra pop square each.
