PEANUT BUTTER AND JAM COOKIE SANDWICHES 🍪 🥪

INGREDIENTS

  •  110g oat flour
  • 35g coconut oil
  • 35g date syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

FILLING

  • Smooth peanut butter (@pipnnut)
  • Raspberry chia jam (I use homemade - 60g frozen berries, 40ml date or maple syrup, heated in a pan for 2-3 mins, stir in 1 tbsp or 10g chia seeds and leave to set , cool and thicken up)

      METHOD

      • Melt coconut oil
      • Mix up ingredients
      • Roll into thin sheet ~ 0.5cm
      • Use cookie cutter to shape
      • Bake at 180 degrees for 6 mins
      • Set aside to cool for 30 minutes
      • Spread PB on one cookie, spread jam onto another cookie and sandwich together
      • Optional - dunk in oat milk 🥛
