INGREDIENTS
- 110g oat flour
- 35g coconut oil
- 35g date syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
FILLING
- Smooth peanut butter (@pipnnut)
- Raspberry chia jam (I use homemade - 60g frozen berries, 40ml date or maple syrup, heated in a pan for 2-3 mins, stir in 1 tbsp or 10g chia seeds and leave to set , cool and thicken up)
METHOD
- Melt coconut oil
- Mix up ingredients
- Roll into thin sheet ~ 0.5cm
- Use cookie cutter to shape
- Bake at 180 degrees for 6 mins
- Set aside to cool for 30 minutes
- Spread PB on one cookie, spread jam onto another cookie and sandwich together
- Optional - dunk in oat milk 🥛
