INGREDIENTS
- 100g oat flour
- 100g buckwheat flour
- 120ml date syrup
- 100ml plant milk
- 1/2 tsp baking soda⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
TOPPINGS
- Sticky date caramel (100g dates, 100g date syrup, 3-4tbsp peanut butter, 4 tbsp melted coconut oil)
METHOD
- Mix all dry cake ingredients
- Add in milk and date syrup
- Scoop into muffin cases
- For the date caramel, blend all ingredients on high speed until smooth
- Make a hole in the centre of each muffin and stuff with salted date caramel
- Bake at 175 degrees for 10-15 minutes
- Allow cakes to cool and top with sticky date caramel
