Weekend breakfasts looking like these sweet, hot and fluffy blueberry muffins with iced oat milk lattes. The perfect excuse for cake in the morning.

INGREDIENTS

MUFFIN

  • 182ml plant milk
  • 95g coconut sugar
  • 1 banana
  • 150g oat flour
  • 1 tsp baking powder
  • 100g blueberries (frozen or fresh)

      METHOD

      • Preheat the oven to 175C, Mix the first 3 ingredients in a blender
      • Combine the oat flour and baking powder in a large mixing bowl
      • Pour the wet mixture into the dry mixture and stir to combine
      • Fold in the blueberries
      • Spoon into a muffin tray lined with paper /silicone muffin cases. Bake for 22-25 minutes until golden. Cool for 10-15 minutes before serving
