GRAIN FREE COOKIE DOUGH BROWNIES⠀⠀

A HEALTHY TWIST ON A SLUTTY BROWNIE

The richest, most chocolaty fudge brownies, sandwiched together with a slab of half baked cookie dough. Even more delicious, hot and straight out of the oven, with a scoop of icecream on top. These are so FUDGY, doughy and delicious, you would NEVER guess that they are grainfree! These are also vegan, paleo and gluten free – made from only 8 ingredients!

BROWNIE INGREDIENTS

  • 2tbsp chia seeds in 6 tbsp water (or flax seeds)
  • 60g cashew butter (or Almond butter)
  • 65g coconut sugar
  • 80g agave syrup
  • 50g coconut oil
  • 75g cacao powder
  • 50g almond flour
  • 70g chocolate

COOKIE DOUGH INGREDIENTS

  • 2tbsp chia seeds in 6 tbsp water (or flax seeds)
  • 60g cashew butter (or Almond butter)
  • 65g coconut sugar
  • 80g agave syrup
  • 50g coconut oil
  • 130g almond flour
  • 70g chocolate

METHOD

  • Preheat the oven to 160C
  • For the brownies, soak the chia seeds in water and set aside for 15 minutes
  • Whisktogether the cashew butter, coconut sugar, date syrup, and melted coconut oil
  • Add in the cocoa powder and mix in until all ingredients are combined
  • Add in the chia seeds and the almond flour and knead into a dough using your hands
  • Break the chocolate into chocolate chips and fold into batter until evenly incorporated
  • Press down into a baking tray and ensure the battery is evenly spread across
  • For the cookie dough, repeat the above steps using the cookie dough ingredients (same as brownies, excluding cacao, and with extra almond flour). Add 20g extra almond flour if too liquidy.
  • Layer the cookie dough on top of the brownies and bake for 35 minutes. Leave to cool for 20 minutes before slicing.

  • If you’re craving an incredibly rich, moist, fudgey and indulgent baked treat right now, I couldn’t recommend this more. Writing this is making my mouth water.
  • The combination of the chocolate brownie with cookie dough batter on top is heavenly. I highly recommend digging into this straight out of the oven!
