CINNAMON ROLLS / SWIRLS

INGREDIENTS

PASTRY

  • 185ml warm water
  • 60g dairy free yoghurt
  • 2 tbsp date syrup
  • 1 pack active dry yeast (2.5 tbsp)
  • 2 tbsp coconut oil
  • 100g buckwheat flour
  • 100g sorghum flour
  • 50g chickpea flour
  • 50g tapioca flour
  • Pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

FILLING

  • 1-2 tbsp melted coconut oil
  • 50g coconut sugar
  • 2-3 tsp cinnamon
  • Pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

GLAZE

  • 1 tbsp date syrup
  • 2 tbsp water ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀

FROSTING

  • 2 bananas
  • 10 tbsp coconut oil
  • 1 tbsp coconut flour

      METHOD

      • Preheat the oven to 180c
      • Mix the first 4 ingredients under pastry until the date syrup is mixed in and set aside for 5-10 minutes for the yeast to activate ⠀⠀
      • Add in the oil, flour and salt and knead until the dough is smooth ~ 5 minutes ⠀⠀⠀⠀
      • Roll the dough out using additional flour into a 25 x 10cm rectangle ⠀⠀
      • Brush the coconut oil on the rolled out dough, sprinkle the coconut sugar cinnamon and salt evenly
