BERRY PANCAKES, ft Pecan Pies, Coco Creme and Raspberry Jam 🥞

The fluffiest pancakes, sandwiched together with raspberry chia jam, coconut cream and topped with our Pecan pies. The pies heat up slightly on top of your pancakes and it is just 🤤 (*Homer Simpson noises*)

  • 1 banana
  • 100g oats
  • 170ml plant milk
  • 1 tsp baking powder
  • 1 tbsp Black goji Berry powder @unicornsuperfoods ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀


  • @prispuddings Pecan Pie, Pocket Sized Pies
  • Raspberry chia jam
  • Coconut creme


      • Blend all pancake ingredients excl baking powder and goji Berry powder until smooth with a beautiful bright pink tint
      • Stir in baking powder
      • Split the mix in 2 and add the goji powder to half the mix (half plain, half goji pancakes)
      • Heat a frying pan and spray with coconut oil, fry pancakes on medium heat for approximately 1 minute
      • When the top side starts to bubble, flip, and cook the 2nd side for 1 minute
      • Stack up and serve with toppings of your choice
      • For the Coco creme - melt 4 tbsp of creamed coconut in a bain Marie, and optionally sweeten with 1 tbsp of agave syrup
      • For the raspberry chia jam - heat 100g of raspberries and 2 tbsp agave or maple syrup, and use a fork to crush until softened. Add in 2 tbsp of chia seeds and leave for 5-10 minutes to thicken
